Spinach and Feta Savoury Muffins.

So here is my recipe for 12 cheesy yummy savoury muffins!

You will need:
  • 250g of spinach already wilted (or you can use frozen and let it thaw)
  • 200g feta cubed
  • 50g parmesan grated
  • 250g self-raising flour
  • 3 tsp baking powder
  • a pinch of salt
  • 1-2 tsp garlic powder (depending on personal preference)
  • 2 medium eggs beaten
  • 70ml olive oil
  • 275 ml milk

  1. First you need to preheat the oven to 200°C.
  2. Pop some muffin cases in your tray and if you want to you can spray each case with a touch of fry light just to stop the cases from sticking to the muffins too much.
  3. Sieve the flour together with the salt, garlic powder and baking powder in a large bowl.
  4. Mix together all the wet ingredients (eggs, milk, olive oil).
  5. Make a well in the flour bowl and gently stir in the wet mix. Don't over mix; it should be a bit lumpy.
  6. Fold in the spinach, parmesan and feta (make sure the spinach isn't too damp as the mixture will become too moist).
  7. Pop in the oven for around 20 minutes (I used an AGA when making this batch and they took 40 minutes so you may need to play it by ear). If you aren't sure if they are cooked, a good trick is to take a skewer and pop it in the centre of the muffin. If when you pull it out the skewer comes out clean you know they are done!
  8. Take out the oven and leave to cool for 5 minutes before placing on a wire rack!

And there you go! Yummy Savoury Muffins! The great this about this recipe is that you can freeze the muffins and just pull them out in the morning to take with you to work, so I always tend to make too many as you never know when you may need a muffin.

I also gave the recipe a go with brie instead. Although they are not as aesthetically pleasing as the feta ones (see the bottom pic!), they were just as yummy especially when they were still warm as the cheese was all gooey. I think next time I make these with brie, I won't add the cheese to the mix but instead sandwich the cheese between two layers of the mix like a cheesy victoria sponge. 

There are many variations on this recipe so you could add chilli flakes and a favourite herb, or a different cheese; I think a blue cheese would also work quite well.
